At Christmastime I love to coordinate my food! These two appetizers are easy to assemble, hold in the refrigerator for hours and they are red and green! What could be better?
Whether I am entertaining at home or need an appetizer "on-the-go", I make these Greek Bites. Since the base is a cucumber slice, it will not get soggy like bread!
Cucumber Greek Bites
Makes 30
2 English cucumbers, sliced thin, ¼”- ½” thick
1 package hummus
1 jar Kalamata olives, drained, olives sliced in half
1 pint cherry tomatoes, halved
1/2 package feta cheese crumbled
Italian parsley, to garnish
Take one cucumber slice, mound small amount of hummus in the center, sprinkle with cheese. Lastly, press ½ olive or ½ tomato in the center of the hummus. You can place a small leaf of Italian parsley as garnish on top.
Refrigerate until ready to serve.
Again, another easy appetizer to assemble, with no cooking!
Herb Cheese Stuffed Peppadew Peppers
1 jar peppadew peppers, drained (I find them at Wegman's and Safeway)
1 package Boursin herbed cheese, softened
Fresh basil
Thoroughly drain the peppers. Chop some fresh basil. Fill a piping bag or a
Ziploc bag with the corner cut off, with the Boursin cheese.
Place a small amount of basil in the cavity of each pepper, fill with Boursin cheese and top with more fresh basil.
