Red Wine Brownies

These are adult brownies for all the people out there locked up at home! Nothing better than a fudgy brownie combining the best things in life wine and chocolate!

1 stick unsalted butter (1/2 cup)

4 ounces dark or semisweet chocolate, chopped

1 ¼ cups brown sugar, lightly packed

¼ cup granulated sugar

2 large eggs, room temperature

¾ cup unsweetened cocoa powder

¼ cup all-purpose flour

½ TSP Kosher salt

1 TSP vanilla bean paste (or substitute 1 TSP vanilla extract)

¼ cup red wine

Preheat oven to 350˚ F. Spray an 8” x 8” pan with cooking oil.

In the bowl of a stand mixer with the whisk attached, combine the sugars together.

In a small saucepan melt butter over low heat. Add the chocolate and stir until totally melted and combined.

Pour the chocolate mixture into the sugar and mix on low speed until well combined. Next add the eggs one at a time while the mixer is running. (You can also use a hand held mixer)

Add the cocoa powder, flour, salt, vanilla and wine to the batter. Continue to beat until all the ingredients are combined. Stop mixing occasionally and scrape down the sides of the bowl.

Pour the batter into the baking dish and bake 40 minutes for a fudgy brownie, 45 – 50 minutes for a more cakelike texture.
